Cannabis-Infused Cheesecake


For the crust:

  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • 1/2 cup cannabis-infused butter, melted

For the filling:

  • 4 (8-ounce) packages cream cheese, softened

  • 1 1/4 cups granulated sugar

  • 4 large eggs, room temperature

  • 1/2 cup sour cream

  • 1/2 cup cannabis-infused heavy cream

  • 1 tablespoon all-purpose flour

  • 1 teaspoon vanilla extract


  1. Preheat the oven: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter or non-stick cooking spray.

  2. Make the crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted cannabis-infused butter. Stir until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared springform pan, using the back of a spoon or measuring cup to create an even layer. Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool.

  3. Prepare the filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream, cannabis-infused heavy cream, flour, and vanilla extract until the mixture is smooth and well combined.

  4. Assemble and bake: Pour the filling over the cooled crust in the springform pan. Smooth the top with a spatula to ensure an even layer. Tap the pan gently on the countertop to release any air bubbles. Place the pan on a baking sheet to catch any potential drips, then transfer it to the preheated oven. Bake the cheesecake for 55-60 minutes, or until the edges are set but the center still jiggles slightly.

  5. Cool and chill: Turn off the oven and leave the cheesecake inside with the door cracked open for 1 hour to cool gradually. Remove the cheesecake from the oven and run a knife around the edge of the pan to loosen it. Allow the cheesecake to cool completely at room temperature, then cover it with plastic wrap and refrigerate for at least 4 hours, or overnight, to set completely.
